Berkswell Cheese

One of my favourite websites, The Foodie Bugle, features a local producer the Ram Hall farm who make the British artisan cheese Berkswell. http://thefoodiebugle.com/article/producers/berkswell-cheese-from-ram-hall-farm-in-warwickshire

The feature is written by David Jowlett, who has had an interest in food, farming and nature since a young age. After leaving school at 16 to train in culinary arts he worked in restaurant kitchens and also became a cheese monger at Paxton and Whitfield, before studying cheese making at the School of Artisan Food.

He is now embarking on a project to build and set up an artisan dairy in South Warwickshire, where he will be producing an alpine-style cheese, inspired by the Fromagers of the Savoie and Franche-Comte, using unpasteurised milk from a single herd of cows.
